Associate of Occupational Studies in Le Cordon Bleu Culinary Arts

Scottsdale, Arizona Culinary Arts Institute has rapidly earned International fame with its superb educational format that focuses exclusively in the Culinary Arts. The Associate of Occupational Studies in Le Cordon Bleu Culinary Arts is an intensive program, completed in 15 months. It includes a three month externship at a national location of your choice. SCI is accredited by the Accrediting Commission of Career Schools and Colleges of Technology and the program is accredited by the American Culinary Federation Educational Institute Accrediting Commission. Chef-Instructors are outstanding and experienced in the industry. As full-time Instructors, they focus solely on your education.

Diploma in Le Cordon Bleu Baking and Pastry Arts

The Baking and Pastry Arts Program begins with the fundamentals of ingredients, proportions, consistencies, and chemical reactions. The student receives hands-on instruction in straight and sponge dough methods, fillings, pastries, puff pastry, specialty yeast dough items, and quick breads. The program reviews different international recipes for cookies, including mixing methods and classifications. Also explored are tartlets, basic syrups, creams, icings, and pie categories.

As the student progresses, the program introduces a variety of cakes, procedures for mise en place, and production of pastries. Service pastry education follows, including petits fours, souffles, buffet pastries, and plated desserts. At the conclusion of the program, the student prepares candies and elaborate showpieces that incorporate chocolate molding and sculpturing, and poured and pulled sugar decorations. The Baking and Pastry Arts Program also provides comprehensive education in nutrition, safety and sanitation, and human resource management.

  • Professional Cook - Diploma
    The Professional Cook is the mainstay of all commercial food preparation. Professional cooks deal literally "hands-on" with food, its storage and cleanliness, as well as its preparation and presentation utilizing a variety of styles and techniques. The Professional Cook program differs from the associate degree program specifically because it does not emphasize the general studies courses necessary for the degree. This program is also available in the evenings and on weekends.
  • Professional Baker - Diploma
    This program is a quick, straight-line approach to an entry-level position in the baking profession. It is designed to give the student a working knowledge of the procedures, ingredients, and "do's" and "don'ts" inherent in successfully functioning in a variety of baking environments including in-store and independent retail bakeries as well as large commercial and domestic establishments.
  • Culinary Arts - Associate Degree
    This program provides a solid foundation in food preparation, purchasing, inventory control, sanitation, and creative cooking methods. Successful graduates are prepared to combine these essential basics with a personal creative flair.
  • Professional Catering - Associate Degree
    Designed to prepare a student for a challenging career in professional catering, this program teaches all aspects of the industry, from food preparation to setting up a small catering business.   • Diploma - Culinary Essentials

The objective of this program is to prepare students to perform the tasks necessary for entry-level management in culinary applications for the food service industry. Building on the skills developed in the diploma program, students will develop professionalism through hands-on experience and personal interaction with chef instructors. Students will develop their own culinary techniques through extensive lab exposure for excellence in food production, creativity, marketing, cost analysis, sanitation and nutrition.
